Both were pumpkin oats, but yesterday’s used the last of the steel cut oats, so today’s used rolled oats. The rolled oats were definitely gluier, which helped while eating in the car, but the steel cut oats are better in all other ways.

I’m so picky.

Yesterday’s lunch:

A mixed up plate of raw mushrooms, frozen grapes, cheese, and crackers, with lots and lots of tea. I felt like crap when I got home from school yesterday – I think I didn’t get enough sleep Monday night. I’ve been having really irritating dreams. Sometime in the middle of the night, I woke up and jerked all the blankets off Crockett, looked around all panicked, and then went back to sleep. Apparently.

I went to school, came home, ate an apple, went to the gym, did a quick upper body workout and ran 2 miles with speedwork (quarter mile warm up, repeats of a tenth of a mile each of 6 mph, 6.5 mph, and 7 mph, quarter mile cool down), and went to the grocery store for the very important half and half… and then realized it was 3:50 and all I’d had for lunch was an apple.

Enter the Morningstar Farms Veggie Bacon, Cheese, and Egg biscuit. 45 second in the microwave, a lifetime in mah belly. (I don’t think that’s how that goes.) I microwaved it for too long because I forgot the instructions, but it was delicious anyway. Whoever does the taste testing for Morningstar Farms must have my same tastebuds, I swear – there is nothing they make that I don’t like. (As I’ve said before, they have no idea who I am and in no way requested that I eat their stuff.)

Part of my recent grocery pledge was to eat through some of the protein we had in the freezer. Cue the organic ground beef that had a sell by date of 18 months ago. (It’s been frozen the whole time, so it was fine.)

Beef isn’t really something I’m comfortable cooking. Fortunately, Crockett is – enter the panfried burger! (I made onions and mushrooms to go on top, and shaved brussels sprouts salad for the side.) We ate them open faced and they were delicious. Good beef, well cooked, is a glorious thing.

Eggs softly scrambled with chopped onions and garlic and chopped basil, topped with goat cheese, and sweet potato chips (thinly sliced sweet potatoes tossed with olive oil and salt and baked for ~25 minutes in a 400 degree oven).

it’s not very interesting being me this week

I went into this week with a series of very important tasks. I have a midterm tomorrow, a take home midterm due Friday, and three homework assignments due either tomorrow or Friday.

I have finished two of the assignments and most of the third, and begun to study for tomorrow’s exam.

The most interesting thing that has happened so far is the fact that yesterday my tenant emailed me to let me know he was distinctly lacking in the hot water department. I took a few minutes off of studying yesterday afternoon to pop over and see if I could relight the pilot – but there was a gigantic puddle of water under the heater. Turns out, that’s not a good sign.

I then took more time off of studying to go to Home Depot and pick out a new water heater. It’s being installed today by a man named Michael Myers.

I think that’s awesome.

That his name is Mike Myers, not that I had to buy a new water heater that I can’t really afford.

Before the water heater debacle, I went to class – an endeavor fueled by stone ground oats mixed with cottage cheese and cherries. (The cherries were frozen, so I stuck a bunch in saucepan and cooked them down into an unsweeted jam over the weekend – that’s the big blob in the middle of the oats).

Back home again, I finally finished the white bean and mushroom soup I made last week. I take my new not throwing food away rule very seriously – this soup is like a week old. It was still pretty good.

Afterwards, I wanted chocolate but settled for an enormous pluot.

Crockett got home at about 4 and hadn’t eaten lunch yet, so he made himself a monster sandwich – to keep my appetite in sync, I had a couple of pieces of bread with brie and a few olives.

SO DELICIOUS.

I don’t know why I don’t eat just cheese and bread all the time.

White Fish Cakes
Based on Salmon Croquettes, from How To Cook Everything On-The-Go

2 small white fish fillets (I used flounder)
2 small russet potatoes
2 shallots
1 clove garlic
1 tablespoon Dijon mustard
1 egg
1/2 cup finely torn or chopped pieces of bread (crusts ok)
2 tablespoons olive oil
1 tablespoon melted butter

Prick the potatoes all over with a fork and microwave them for 7 minutes, stopping once to flip them over. Set aside to cool a little bit.

Pan fry the fish with a little salt in a non-stick pan over medium high heat. If you have thin fillets, it will take less than two minutes per side. Set aside.

Peel the potatoes and add them to a bowl in chunks. Finely chop or grate the shallots and garlic into the bowl, and then add the mustard, olive oil, and egg. Mash it all up.

Add the bread crumbs and the fish, and stir until the fish has broken up and is pretty evenly distributed. Form the mixture into six or seven palm size patties, and refrigerate until you’re ready for dinner.

When you’re ready to cook, heat your same non-stick pan over medium to medium low. Brush the patties on one side with melted butter (thinly) and add to the pan. Cook for 5 – 7 minutes, or until the bottom is nicely brown. Brush the exposed side with butter and flip, cooking until they’re warm through and the bottom browns again.

Serve with lemon wedges.

We ate ours with roasted asparagus and leftover brussels sprouts salad.

Mmmm.

The tazmanian devil (upsidedown) helped me get through the pain of my flu shot.

I’m so-so on things like flu shots – especially as a relatively healthy young person. However, flu shots are free and encouraged at school, and while TAing I feel like I’m probably extra at risk. I went for it yesterday, not considering how crappy it was going to make my arm feel and how that was going to impact my planned workout (spoiler alert – I skipped the workout all together in favor of happy hour. It’s the flu shot’s fault, I swear.)

Lunch was another version of Thursday’s watermelon salad. I swapped out the mixed greens for just arugula, and topped the whole shebang with a little bit of warm pulled pork. The pork perfectly filled the hole that I’d said needed mango or avocado. This was so good. SO GOOD.

Also? Yoplait parfait.

So gross. (I literally threw half away, which I HATE doing, but it was just nasty. I think it might have been good if I hadn’t just had so much natural sugar in the watermelon – it tasted super chemically.)

I took the dogs for a walk and then futzed around my homework for awhile. (Futzing around your homework: looking at it, ostensibly creating a plan of attack, without actually doing anything useful.)

Then Crockett said ‘let’s go play’ and I said ‘badass. Let’s do it.’

We went to the Empire. Since I ate lunch fairly late, I focused mainly on the happy hour menu in lieu of dinner.

I usually have the same thing to drink here (Basa, a Spanish Verdejo), but tonight I decided to branch out.

This is the Bubby St. G – a mix of St. Germaine, gin, prosecco, and lemon. It’s just barely sweet, just barely bubbly, and quite delicious.

To round it out the meal, I had a piece of Humboldt Fog with some crunchy bread.

Crockett went with the pulled pork sandwich (because apparently he hasn’t had enough lately?), and Dale’s Pale Ale.

Sometimes, happiness is a local restaurant with tasty food.

Right now they have a High Holidays menu, too, but I wasn’t hungry enough to dive in. Maybe we’ll go back before they’re over, and I can have me some kugel.

After dinner we went home to watch Paul – it was surprisingly sweet, but lacked the hilarity of Shaun of the Dead. It did only further my love for Kristen Wiig, so if you like her, I totally recommend it.

One day, in the not too distant future, I will in fact eat a meal somewhere other than my car, my office, or the kitchen table surrounded by school books.

That day is definitely not today.

First, I ate oatmeal while grading homework. (I do have a grader but the first exam is next week and the kids need their homework back and oh also my grader has mono. Yeah, that’s happening.)

I had a whole thing with oats this summer. I was all ‘we’re together every day and I think it’s getting old, I want to see other breakfasts’ and they were all ‘but you know you love us and your heart loves us too’ and finally, sometime in July, I said no. I broke it off with them.

They assured me I’d be back.

And here I am.

And it’s true. I missed them. This particular batch had shredded coconut, a chopped pear, and cottage cheese. It was good, but I’ve lost my knack for the perfect bowl. It’s ok, I’ll try again tomorrow. I know they’ll always be there for me.

I lectured again (test review) and unlike last week, I pretty much nailed it today.

I celebrated with a kickass salad. Seriously, this was insane. It’s a slab of watermelon drizzled with balsamic vinaigrette, topped with mixed greens, chopped tomato, and enough goat cheese that it might just be cheaper for me to raise a damn goat in the backyard.

It could have used something soft and mild – avocado, maybe? Again, I can always try tomorrow. There is half a watermelon haunting me from the fridge.

I finished up an assignment that’s been killing me around 7, so I went to the gym and ran like a nutball. Too fast, arms and legs flailing, red faced – the whole shebang.

Please consider this both a post and an experiment, k? I finally finally finally joined the ranks of people who like the internet who also know that a web interface isn’t the always best thing ever. (What. WordPress, I love you, but come on. You know you’re a pain in the ass sometimes.)

Sugar continued to be my friend through Saturday night. I took advantage of that fact to eat an entire half watermelon. By myself. In mah bellah. Immediately preceding a run. Sloshsloshslosh.

To finish the meal trifecta, I made loaded baked potato soup. (Except with light sour cream and bacon as a garnish only. Just because I was indulging doesn’t mean I had to be awesome about it.)

Today I made the unfortunate choice of having tuna salad for breakfast. Unfortunate why? Because my breath smelled like tuna all day?

Oh, if only it were that simple.

I sneezed while eating it while driving, and now my car smells like tuna.

And then? I ate a terrible cobb salad for lunch. The egg didn’t taste like egg. The bacon didn’t taste like bacon. There was roughly a gallon of ranch dressing. Obviously this will teach me not to forget my breakfast and then eat my breakfast as lunch. It leads to a fishy smelling car and a crappy lunch.

We made up for all the unfortunateness with  dinner, though. Crockett grilled some flounder that I got on screaming sale (he marinated it too – in pure deliciousness) and I gently spiced (thyme, cayenne, cumin, onion) and heated up some canned black beans.

So simple. So frugal. So tasty.

I don’t know why we eat out so often.

Oh wait, yeah I do.

For the first time, students came to my office hours today.

Probably because we’re getting close to the test.

Everyone is freaking out.

For example, last night, I was freaking out because I’m getting close to a test in my Statistical Methods class, and I couldn’t do my homework.

So I broke down and ate a kiwi.

Just one.

I swear to god my IQ increased 10 points immediately.

With my increased IQ, I decided to have a couple of ounces of wine. I mean, I already had a foot hanging off the side of the wagon.

With that small fortification, I was able to finish the pain in the ass assignment that I was doing (that ended up being 12 typed pages along with 4 pages of handwritten equations. SERIOUSLY?).

I have, perhaps, discovered that giving up sugar means that a tiny bit of sugar turns you into a superhero.

In order to maintain that superhero-like ability, I got back on the wagon for dinner.

Lasagnchiladas in the slow cooker
Inspired by… the internet, named by Crockett

  • 1/2 small onion, finely chopped
  • 2 cans (about 4 cups) cooked and drained black beans
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 6 – 8 ounces cheese
  • a big jar of simple salsa
  • 12 taco size tortillas (flour or corn)

About the ingredients. The cheese – anything you like. We happened to have a bag of pre-shredded low fat Mexican cheese blend, so I used that. It was the classy stuff (purchased on sale -Sargento I think) without a lot of stabilizers, so it melted nicely. If you use the other pre-shredded stuff it won’t be so drippy but eh. It’s still delicious. The salsa – just don’t go nuts. If you use chipotle pineapple salsa, it will totally change the dish. It might still be good, but who knows? This is a good place to play it safe. If you do go wacky with the salsa, rethink the chili powder and cumin. Or? Make your own salsa, you homemakin’ fool you. Finally, the tortillas – if you’ve given up sugar, you can substitute thin slices of summer squash, as I did.

Stir the beans, onions, chili powder, cumin, and salt together.

Pour about 1/4 of your salsa onto the bottom of your slow cooker.

Put in two tortillas (or however many cover the dish appropriately – if you have an enormous slow cooker, you might get less layers than I did) on top of the salsa. Put about 1/3 of the beans on the tortillas, then two more tortillas, then 1/4 of the salsa, then about 1/3 of the cheese. Repeat twice more – tortillas, beans, tortillas, salsa, cheese, tortillas, beans, tortillas, salsa… but WAIT. Hold the rest of the cheese.

Turn the slow cooker on high and let it go for 2 – 4 hours. (Or 6 – 8 on low). When you’re about 5 minutes from eating, dump the rest of the cheese on top and recover the slow cooker to let it melt.

Let your boyfriend come up with a wacky name for the dish, and eat it.

 

Also, try not to drip salsa on your schoolwork. I shoulda put that in the recipe.

I maintained my healthy eating today, too. I had more of the muffin fritatta things for breakfast (not pictured because come on, they’re little yellow muffins that you’ve seen before), and for lunch a delicious salad.

Except without my chick’n patty, because vegetarian meat substitutes are not in any way low carb.

I would like to say that between the buffalo tofu, chickpeas, and mushrooms (all heated together in a nonstick pan prior to serving) I didn’t even miss the chick’n patty.

If I said that, though, I’d be lying.

Oh well.

Yesterday I got a (the last!) spot in my favorite parking lot.

It was obviously a sign.

I had a little snack while I walked to my car, so that I’d have enough energy to go to…

Since I had such good luck on campus, I thought maybe I’d try my luck after school at Target. Perhaps they would be restocking the Missoni zigzag sweater coat for the Saturday shoppers!

What. It could happen.

Sadly, the Missoni coats were still MIA. I did get the groceries and stuff that I like to get at Target though – cream cheese (always cheaper there), cotton swabs, stuff like that. Not produce. Never produce. (Why do I feel that Target is less reliable for produce than, say, Albertsons? No idea.)

Also, yes, everything in that picture that isn’t in a Target bag was in my car prior to my shopping trip. It’s all school papers and clothes (eventually) headed for Goodwill.

When I got home I stirred some rice and soy sauce up with an egg in a fry pan. I wanted a little lunch because last night was…

Oktoberfest!

Yeah, I know yesterday was September 16th. Since I’m not entirely sure what the history of Oktoberfest is, I’m not sure that’s wrong, but doesn’t it seem like Oktoberfest should be in October? Silly Louisville.

We ended up heading over there later than I’d expected, so I had a nectarine that had been in the fridge so long it was all wrinkly. It was so amazingly sweet – it literally tasted like I’d dipped each bite in honey.

Maida wanted some too.

Unfortunately, I forgot my camera. I did, however, remember both my phone and the always crucial ID. Dale’s Little Yella Pils for me thank you very much.

The band that was playing when we got there was (were?) The Beloved Invaders.

They’re surf rock.

I sort of feel like Louisville was phoning in the whole Oktoberfest thing.

The food choices were pretty limited.

Along with bratwurst and pizza by the slice, there was this guy – frying up Oreos and funnel cakes like there was no tomorrow.

Since we didn’t feel like sausages, we headed to The Empire for dinner after we’d had our Oktoberfill.

Crockett had a BLAT.

I ate half.

I had a calamari salad.

Crockett ate half.

I guess, if you have someone to share dinner with, the white whale (or Missoni sweater) isn’t that important after all.

Awkward.

So, good weekend?

Oh, wait, you’re still on your weekend?

Sometimes I hate my school.

I’m in class today.

I’m still trying to identify the perfect meal that I can eat while driving that will keep me sated until I get home from school at 2. Pluots and grape nuts are not it.

Yes, I could take lunch to school, but since I’m always in class, I’d end up eating it in the car on the way home, and I refuse to eat two meals a dat that way. It’s just not couth.

The college tried to pre-apologize for today by throwing us a fair on Friday, but it was only during the hours that I was otherwise engaged. Watching it get set up was all I managed.

Apology not accepted.

This is why I like to eat lunch at home. Fresh foods.

Fresh, briny foods.

Pickles, pickled beets, olives, and cucumber and tomato salad with feta.

Apparently I felt the need for salt.

Three facts about these egg roll looking things.

  1. I don’t remember which day I made them
  2. They weren’t very good.
  3. They were actually perogies.

See? Potatoes and cheese and onions.

I think if I’d fried them they would have been delicious.

But I don’t fry things.

Oil everywhere.

Not my thing. 

One thing that I made that I liked and Crockett didn’t was pizza on zucchini and sweet potato fries (from this recipe, which didn’t turn out quite as hoped but were still damn good). Again, would they have been better fried? Of course. But I don’t fry.

One thing that made us both happy was bagels, from Cafe de Paris downtown.

One egg and green chili and one tomato, mozzarella, and pesto. Split down the middle.

Obsessed. I don’t know exactly what happened – all of a sudden I’m just not even mildly interested in cooking my oats. Perhaps, despite the fact that it’s supposed to snow today, it’s the feeling of encroaching spring?

Our mix yesterday morning was muesli with frozen mixed berries defrosted into a juicy delicious mess, almonds and honey.

Muesli, if you’re not familiar, is uncooked oats mixed with yogurt or milk (or water, I guess) until they’re a little bit soft. The mixture above is pretty dry – it’s about 1/3 cup rolled oats with an equal amount of yogurt and a splash of water. When Crockett ate it he said ‘this isn’t as pasty as I expected’.

High praise, y’all. High praise.

Do you see that six days later the beautiful irises Laura brought me are still going strong?

When I was packing my lunch, I cut open this kiwi and I was hugely distracted by how gorgeous it was on the inside. Ain’t that just beautiful?

I finally finished the tuna casserole from Sunday while I was on campus. I have to say it help up pretty damn well.

Then, of course, I semi bombed a quiz in my Formal Automata class.

Sigh.

You know what makes me feel better about bombing quizzes?

Banana bread. I keep buying bananas – I hate wanting a banana and not having one – but we don’t eat them that fast, so I keep throwing the old ones in the freezer. The thing I love about banana bread is that it’s virtually foolproof. The sweetness of the bananas, the chocolate chips, and the crunch of the whole wheat – even if you’re not a baker, this will turn out well. Just what you need after a bad quiz, maybe.

Banana Bread (with chocolate chips, pecans, and a nod to whole wheat)

  • 8 tablespoons (one stick) unsalted butter at room temperature
  • 1/2 cup firmly packed like brown sugar
  • 2 eggs
  • 3 very ripe bananas, peeled and mashed with a fork
  • 1 1/2 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 1/2 teaspoons kosher salt salt
  • 1.5 teaspoons baking powder
  • 2 tablespoons flax seed (optional)*
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup pecan halves, roughy chopped*
  1. Heat the oven to 350 degrees. Butter a 9×5 loaf pan, and 8×8 baking pan, or an 8×4 loaf pan.
  2. Beat or stir together the butter and sugar, then add the bananas and make sure to smoosh them in good. Stir in the eggs and vanilla.
  3. Dump in all the dry ingredients (flours, salt, baking powder, and flax if you’re using) and stir them up a little bit before you mix them into the wet ingredients.
  4. Stir in the chocolate chips and pecans. Scrape into your prepared pan and put into the oven for 45-55 minutes (25-35 minutes if you’re using the 8×8 pan). If testing with a skewer, you’re not looking for dry, you just want it to not look like it was dipped in melted butter.

*I meant to use the flax but forgot, to it’s not in the loaf you see above. Also, I didn’t chop my pecans and while I like the big bites of nut, it made the bread hard to slice.

This is from a smaller dish that I made, because I was worried about the 8×4 loaf pan not being big enough.

I spent last night at my mom’s house with her dogs, because she’s off being a superwoman (USA Masters Indoor Track & Field Championships) and she didn’t want them to get lonely.

Based on the reception I got, I’m thinking they weren’t pleased to have me as a replacement.

“What do you want, lady?”

“Oh, I’m sorry, did you want me to look at you? Um… nah. Thanks for the offer though.”

I probably should have brought them some banana bread.

the lost weekend

Sadly, this story is not going where you think it’s going.

Friday morning I had a very important date.

This lovely lady is my co-blogger on The Road More Travelled. We’ve been friends since we were 12(ish) and she is that friend that I know I will have when I’m old and grey and bitching about the crappy food at the old folks home.  She had me to her house, which had been very seasonally decorated by her little ones.

She fed me a very South Beach friendly meal, because her husband has been doing something very similar for literally years now. She’s used to it.

Lady Grey tea. Apparently this isn’t all that popular, but I adore it. If you haven’t had it, close your eyes and let your memory of Earl Grey tickle your tastebuds. Now add a little orange and a little lemon and subtract a little tannin. Oh with the yum. I never keep it in my house because only Twinings makes it commercially and my local stores don’t stock it, and our local tea house is like 11 whole miles away so clearly I can’t get there very often (even thought they make their own blend and it’s damn tasty). Thank goodness Laura is around to compensate for these failings of mine.

In case you were wondering.

That lovely souffle looking thing is a crustless quiche that she made with ham, packaged cholesterol free eggs, and some delicious cheese. (It flattened out when we removed it from the oven, it wasn’t truly six inches thick.)

Fruit salad. Technically fruit isn’t in my phase 1 list of allowed foods, but honestly, like I’ve been following those rules. I ate it up. (Don’t worry, I checked out the real South Beach book today and I’m going to follow the real rules, not the half-assed-learned-them-on-the-internets rules.)

Are you jealous right now? I’m jealous and I got to eat it.

She’s the best. Plus?

She totally gave me the Las Vegas cup. That’s just how she rolls.

I did go to school on Friday, but I have no photographic proof because I didn’t eat while I was there. (You can consider that foreshadowing, if you’re the kind of person who likes to consider foreshadowing instead of just internalizing it and moving on.)

I did, however, send Crockett this series of IM messages before leaving campus:

It was his birthday happy hour. We went to see him, have fun, be crazy, etc etc. We toured around Louisville, crashing more than one corporate happy hour, and ended up out with pizza. Pictures were not so successful, due to bar lighting. Oh, except?

This one. This one came out great. If I weren’t already with this guy, I’d be tracking down his phone number and dating status right now.

Saturday, the cold had hit with the vengeance that only November colds can have. (That’s what I was foreshadowing earlier, so you can stop holding your breath now.)

I don’t know what I ate all weekend. Yesterday I managed to get out of bed and stagger to my office to do some homework, but the only evidence I have of food is this.

Yogurt with almonds and honey. I seem to remember there being cereal, as well.

It was all very exciting.
