what weekend? and peach bars!

One particular thing that I forgot about working in a office.

“How was your weekend?”

It’s not that I mind people asking. Even semi-faux interest is a nice gesture when you’re spending serious quality cubicle time with people. It’s more that I immediately lose track of what happened over the weekend the second I walk back into the building. Weekend me disappears and week me, who is a lot like weekend me except without the fun part, gets all up in my frontal lobe.

I did have a good weekend, though!

The girls and I had some weird moments where they enthusiastically sniffed at a fence (that’s in front of another fence) so hard that Maida started snapping at Cloey because she was hogging the sniffing.

Why weird? Because I stuck my nose near the fence too. I wanted to see what all the fuss was about. I didn’t smell anything, but there’s a pretty good chance that I sucked something gross into my nose all the same.

Crockett and I looked at our freezer and realized that some of our favorite tamales from Costco that we don’t eat anymore because one day we accidentally looked at the nutritional information (TERRIBLE IDEA, PEOPLE) were still hiding in there, so steamed ‘em up. There’s taking care of your health, and there’s wasting food. I prefer to do the first and avoid the second, but sometimes the two collide, and you have to have tamales for dinner.

Mine fell apart on it’s way out of the steamer, but it was still so delicious that I swooned. Swooned, I tell you. There’s nothing like a hearty mixture of lard and masa to really bring a Saturday night home.

Also, I made peach-thyme cornmeal crumb bars.

Because my peaches were being stupid and my thyme plant was being awesome. The recipe is at the bottom but I have a LOT of words today ok? Ok.

Sunday was basically more of the same, except with some cooking for the upcoming week and some laundry doing and oh right also less recovering from multiple texas slushes.

Did I mention that Friday night was a big night?

Sunday morning I snacked on some fruit and then ran to the store to get half and half, which I’d forgotten on my big Saturday shopping trip. My local Albertson’s, which is a workhorse of a grocery store that can totally fill in for half and half when needed but isn’t really my go-to for … well, anything fresh, had a small basket of hierloom tomatoes. I don’t know where they came from, and I don’t care. They looked wonderful. (I can no longer accept the regular ones now that I know their color is ruining their flavor! They look pretty and then blerg. I’m over it.) I bought two and three avocados and when I got home I pulled Crockett away from his tree trimming for brunch BLATs.

That was a really long story just to have it end with BLAT, when you could clearly see there was a BLAT right there.

The tomato was so good that I ate it with the leftover aioli (ha – light mayo with additional lemon juice and powdered garlic).

Then, to continue our produce-centric meals, I made a pizza with tomatoes (Pomi), tomatoes (yellow cherry), mozzarella (left over from book club), goat cheese, and two kinds of basil.

It was super tasty.

Cloey really really wanted a bite, but I was too focused on Hell On Wheels to give her more than many minute of doting attention.

Look at her face.

Seriously.

She didn’t get any, though, because her tummy is still upset and also pizza isn’t for dogs!

Peach Thyme Crumb Bars
Based on Smitten Kitchen Blueberry Crumb Bars

1 cup white sugar
2 cups all purpose flour
1 cup yellow cornmeal (not stone ground)
1 teaspoon baking powder
3/4 cup cold butter, cut into slices
1 egg
1/4 cup sour cream (light is fine)
1/4 teaspoon salt
3 tablespoons minced thyme
4 cups sliced peaches (I did not bother peeling them)
1 1/2 tablespoons cornstarch

Heat your oven to 375. Grease a 9 x 13 or 10 x 10 inch pan. (Crockett got me this square nonstick Williams Sonoma cake pan that I worship and I literally bake everything I can in it. I didn’t even grease it.)

Stir together the first four ingredients and the thyme. Scatter the butter over the top and cut it in using either a pastry cutter or the tips of your fingers. When the butter is mostly flat and small, add the egg and the sour cream. Smoosh it together until it’s holding together in small clumps, and pat slightly more than half into the bottom of your pan. You don’t need to  press very hard, just make a flat surface.

Toss the sliced peaches with the cornstarch, and lay them out in a roughly even layer. Sprinkle the rest of the dough over the top, as close to even as you can get.

Bake for 45 minutes. You want the top to be lightly brown and the fruit to be bubbling where it’s visible.

Munch munch munch.

So I’m sure you don’t know that tomatoes are awesome right now. Because of how you don’t go to any stores or look at the internet at all.

These are some heirloom babies that Crockett and I picked up at Whole Foods. Yes, they were $4 a pound. Yes, I find that entirely reasonable. I wanted to use them for BLATs, but then I forgot, and then they’d been on the counter for several days….

Isn’t buttload a charming word to use when referring to food?

These bowls of rice and cottage cheese are not for me. As shocking as that may sound. My Cloey has been having some digestive issues lately, and on the vets instructions she’s on bland foods for a couple of days. The bowl on the right is for Maida – she gets a little rice and cottage cheese with her dog food so she doesn’t feel left out.

I’m not actually sure if she’s capable of feeling left out, but I would feel like she’s left out, and that’s close enough.

I’m a worrier. I don’t mean to be a worrier, but I am a worrier. It sucks.

Like, on Saturday? When I was at my family reunion?

My mom and I went to run some errands, and we put all four of our dogs in the car to accompany us. Don’t worry, it was only 65 degrees – the car was a happy place for them. We pulled up to the shopping center closest to our ranch, which happens to be at the intersection of two mountain highways, and parked the car. Maida, my lil puppy girl, hopped out of the car to come shopping with us, but I caught her and put her back where she belonged.

When we returned to the car, literally less than five minutes later, we saw my Cloey in the front seat, mom’s Buck in the back seat, and mom’s Charley hanging his head out the rear window.

And no sign of Maida.

So, my mom’s dogs are big. She doesn’t have to worry about half open windows, because her boys aren’t going anywhere. I should have checked to make sure the car was a safe place for my girls, but it didn’t occur to me. I stuck my head in the windows and opened the door of the seat where I’d left Maida, and I called her, and there was no sign of her.

My mom and I spent twenty minutes running around the parking lot, asking strangers for help, and screaming Maida’s name. I was absolutely sure that Maida was smushed somewhere. I called Crockett, who was only a few minutes away at the ranch, and asked him to come down. He asked me a series of reasonable questions but I was absolutely NOT hearing it – I was instead stopping every few minutes and going into a ‘where’s my DOG’ panic attack?

Are you scared?

Don’t be.

Maida was sleeping under the driver’s seat of the car. Crockett found her within ten minutes of meeting us. While I was accosting strangers and begging them to help me find my puppy, he was using his brain.

Yes, I’m a worrier.

Today something else happened that turned out ok, but I’m still all blerg about it, so I’m not ready to share. However, I will share:

The delicious bag o’ heirloom cherry tomatoes that I bought on my way home from work yesterday at Ollin Farms.

I remembered to take a picture of the farm as I was driving away. Pretty, eh? I drive by it on my way home every day and this is the only time I’ve stopped.

I ate some of them for lunch today, along with the last of the leftover turkey burgers from the reunion and a Diet Coke. I’d really really wanted a Fresca, because hell yeah Fresca, but the F button was broken on the soda machine and the Frescas were in the F row. I’m really worried that they’re going to stop stocking them because no one can buy them. Stupid row F.

Ok, here’s today’s question, a little early.

Do you like scallops?

Because I want to like scallops, and I just don’t, really. I don’t dislike them, but for me they’re like lobster. Special in theory, but really nothing more than a vehicle for buttery sauce in practice.

Crockett freaking loves scallops, though, so last night we had scallops. They were good, for scallops. Crockett loved them. What do I know.

Thai-ish Scallops and Rice

8 oz sea scallops, fresh or defrosted (I got ours frozen from Whole Foods – they were sustainably sea caught(? do scallops run away?), cause I’m all smug like that)
olive oil
3/4 cup jasmine rice
1 cup coconut milk, light or not light
3 tablespoons Thai basil, not chopped (regular basil or mint would be good too)
2 tablespoons lemongrass (I buy the chopped stuff in the tube from the grocery store because it keeps for awhile and I have no idea where to get fresh lemongrass)
salt

Combine the rice and 3/4 teaspoon of kosher salt and 1 1/2 cups water (or however much you usually use, I’m at 5300 feet and need a lot of water for boiling things) and bring to a boil. Reduce to a simmer and set a timer for 20 minutes.

Combine the coconut milk, basil, and lemongrass in another pot and bring to a boil, then reduce to a fast simmer. Add half a teaspoon of salt. You want this to reduce while the rice is cooking. (If you want to cook the rice in the coconut milk you can, just wait until ten minutes of cooking have passed before adding herbs. I personally like it as a sauce because you can pour it over the scallops.)

When the rice is pretty much done, heat a pan over medium high and add some olive oil. Pat the outside of the scallops dry and salt – somewhere between generously and lightly. Not four grains, but not 500 either. If you’re using kosher salt, I would aim for about a teaspoon and a half for all the scallops, about  teaspoon if you’re using regular salt.  When the oil is hot, place the scallops in the pan with one flat side down and set your timer for one minute. When one minute has passed, flip them to the other side and cook for one more minute. Touch the top and if they still seem squishy, give them thirty more seconds. If they feel firm, pull them off the heat super quick and transfer them to a plate.

Serve rice, top with scallops, and pour reduced sauce over the top.

I’m having a weird week – I have this thing where I just get these headaches every day for a few days, and then no headaches for ages. Since it’s cyclical, I suspect it’s a girl thing? Cyclical things always are. Stupid cycles.

Anyway, it always makes me feel kind of off. My sleep patterns get wonky, because of naps, and I don’t feel like my brain is working at it’s full potential.

Oh, and one of my aunts thinks that she got bedbugs at the lodge this weekend. That’s not really helping with the sleep.

I’m not telling you this for any useful reason, it’s just true. I should have blogged last night, but I actually forgot. Like, forgot I was a blogger. I watched The Walking Dead and also watched Crockett fold laundry instead.

Brain dead, zombie style.

 

Other examples: those things attaching my hand to the puppies? Yeah, those are belts. I couldn’t remember where I’d left their leashes.

I took this picture (why, oh why, do blackberries mold so fast?) without realizing there was a ghost (alternately, a thumb) in the upper left corner.

Don’t worry, these blackberries weren’t moldy. It’s just that I had to eat like four pints in two days to be able to make that be a true statement.

This morning, post extremely slow one mile run, I carried around my breakfast shake and iced coffee all morning while getting ready…

and then with three minutes left before I had to leave, realized I hadn’t consumed any of either of them. Even though, yes, they accompanied me to the bathroom sink.

Anyway, can I tell you guys about the best and easiest salad dressing ever? I can? Awesome. I made it last night, even with my wonky headspace issues.

Miso Dressing

2 tablespoons sweet white miso paste
1 tablespoon olive oil
1 1/2 teaspoons rice vinegar

Smoosh everything together until completely combined and toss with salad, preferably a chunky one. (The dressing doesn’t work better on chunky salads, I just don’t really approve of salads that aren’t full of stuff). Makes about two servings.

There are a lot of options here, of course.

  • You can add a little water if it seems too thick – you don’t want any chunks of paste left, because they turn into a weird, sort of gritty mouthful.
  • You can start with a different kind of miso, although I never do because the white is the mildest and I like that umami hint, not a full on miso flavored  salad. I get my miso paste at WholeFoods in a flat white container that snaps shut, and the paste keeps forever. The container I’m currently using expires 7/2013.
  • Different fat? Absolutely. Bacon fat would be nice on an appropriate salad, or a walnut or hazelnut oil (probably sub only half the olive oil out, unless you’re CRAY about the taste of your nut oil).
  • Different vinegar? Sure! A fruit vinegar would nicely complement a salad that contains fruit, of course. My salads always contain fruit, but I never have fruit vinegar. The only vinegar I’d skip would be a heavy balsamic, at least with white miso. Too powerful. White balsamic should be ok though.
For reals, it’s delicious. There’s no emulsifying, no herbs, no need to salt (although I usually lightly salt my salads after they’re dressed) – no issues at all, just tastiness.

I don’t go to the Louisville farmers market as often as I intend to – which is every week. And then every Saturday it’s like noon, and I convince myself that the good stuff is probably all gone, and I skip it. It’s ridiculous. However, today I was up at 7 to do my chores and walk the dogs.

And almost seriously mess up my breakfast.

I was boiling water for coffee with one hand and mixing up my strawberries and Kashi with the other. When the water came to a boil it was also time to add the yogurt to the cereal, and I came thisclose to pouring the water on the cereal. (The photo above is a dramatic reenactment. I’ve always wanted to do one of those.)

Then I turned some jeans I never wear into shorter-than-I-meant-for-them-to-be jean shorts, and took the girls for a walk.

Sadly, even though it was only 8 or so, it was already really hot for the girls.

We stopped in every available piece of shade and lounged.

I can’t decide if I’m more entertained by her wiggling around on her back or her being so white that it’s almost impossible to take a picture of her outdoors.

When we got home, Maida got herself into this position and Cloey found a similar one on the tile floor of the bathroom. I swear that I didn’t put the sheet over her, she managed that all on her own. With the girls taken care of, I took off for the farmers market.

I’m always surprised by how big our market is, for a town of 20,000 people. There’s a huge produce stand behind where I’m standing here, and the booths go all the way down the block and around the corner. One of the reasons that I don’t always make it is because I’m not a big fan of dirty vegetables. I know, I know, I would like to support local farmers. Is it too much to ask that they clean off all the earwigs first?

(Yes, I know that’s too much to ask. That’s why I don’t ask them!)

Pappardelle’s pasta stand is ENORMOUS and conveniently earwig free. I spent ten minutes staring at pasta types – it’s kind of a mental switch to think of pasta as something other than a blank slate.

After picking up my pasta, I swung by the stand with the largest line – Palisade Peaches!!

Look, I’ve never had a peach from Georgia. All I know is that a fresh Western slope Colorado peach is a beauty to behold. I intend on eating this whole bag this weekend.

Then I saw a place called Soljuice, which is new (to me, at least). I asked the woman taking orders if they had a storefront anywhere, and she said they basically only exist at this particular farmers market. They were using a juice extractor rather than a juicer – my understanding of the difference, as she explained it, is that a juicer that uses centrifugal force can damage the goodness in the plant cells. The other difference is that the juice extractor the booth was using took approximately four minutes to make 12 ounces of juice. I ordered The Green and popped over to Paul’s Coffee, the next booth, to grab a pound of the beans Crockett and I like.

Turns out buying beans got me a free iced coffee – and who am I to say no? Even balancing two drinks, I managed to visit a couple more booths. One, where I took the above picture, was selling very pretty macarons! I bought two, because, come on. Macarons.

The other was selling (and giving tastes of) wine.

I tried a sip of two different whites and a red. It was good but all very uncomplicated – there was no unfolding of flavors of any kind. That’s ok from a four dollar bottle, but these are 13 – 15 dollars each, so I passed. It’s possible that the heat and the time of day were effecting my taste buds, but either way I didn’t feel like splurging.

My haul: coffee, a lavender and dark chocolate macaron, a salted caramel macaron, my peaches, some green jalapeno pasta that I intend to use with some shrimp when Crockett comes back, and this sauce called Watochi from a company called Two Mile Creek. I tried it at the booth – the guy was awesome and the sauce is super wacky. It’s a watermelon base, with chipotle and tomatoes and all kinds of good stuff. They also had pepper jellies, which I love, but they all included bell peppers and I opted not to have an allergic reaction in the middle of the market.

I should go more often! Except that this, along with the juice, cost forty-two dollars. Ouch. (1/2 lb pasta – $4. Peaches – $6. Macaroons – $2.50. Watochi – $8. Coffee – $15. Juice – $5.50.) Maybe I should stick to regular markets.

 

 

turn and face the… day? stray?

Sure, I could Google the words to that song, but the final word of that line isn’t really the point.

The point is – changes! The point is that I graduated!! Finally!! And am working again!

Basically, I’ve returned to a fixed schedule and a happy paycheck. I haven’t quite paid off my portion of the vacation that Crockett and I took between my graduation ceremony and the first day of my new job, and I can now say that I’m a master, but otherwise it’s like nothing ever happened. I leave my house at 8 am and arrive home at 5:30.

I forgot what it’s like to have free time and free brain cells.

Unfortunately, I’ve gotten out of the habit of taking pictures over the last few months. (P.S. If anyone sees my camera that’d be great kthanx.) That doesn’t mean that we haven’t been eating well! (So well that, right now, while Crockett is out of town, I’m joining a dear friend in that age old tradition of counting points – WW style, yo. Although the home eating probably isn’t what did it for me. I suspect that the five-a-day cream of coconut based drink habit I developed in Antigua are probably what did it for me.)

Some of the things I’ve made repeatedly in the last few months:

There’ve been salads – both the greens kind and the chicken kind and the tuna kind. We’ve only turned the grill on once.

I don’t know. The whole last semester is sort of a blur.

Anyway.

I went line dancing last weekend. And rode a mechanical bull.

That was fun for me. I’m not entirely sure what’s happening in the first picture. I think I might be pontificating. Doesn’t that look like a pontification finger? And the second picture is not, in fact, an elegant dismount, but rather me trying to stand up after falling off. I’d show you the dismount picture, but that’s a damn short dress I’m wearing.

It’s been hovering around 100 degrees here for WEEKS, and yesterday it finally rained for reals. Like for hours it rained. It was lovely – too late to save our grass (which we DO water, despite appearances to the contrary), unfortunately, but nice for our herbs and my general attitude.

Not only is Crockett out of town, my mom is in CO Springs being a bad ass bicycle racer. I did my part by walking her dogs.

Well, that was the plan. Mostly they walked me.

Then, when walking my own dogs, I ran into this:

Since my dogs weigh approximately 25 pounds combined, I didn’t feel like facing down a coyote.

We turned around and I came home for breakfast. Even though it’s cooler today, I haven’t really felt like cooking – more like stirring stuff together and calling it a day.

This gorgeous combo you see here is Kashi Go Lean (which I never used to like and suddenly cannot get enough of – especially the things that they openly call twigs. I love that they own it), fresh cherries (pitted with my teeth since I was the only one eating it – teeth pitting is the best way, y’all), greek yogurt, and pistachios. (5 points, if you’re interested in that kind of thing.)

I know I just said this about Kashi, but I also didn’t used to like pistachios. I have, happily, discovered that what I really didn’t like was shelling pistachios. I don’t mind shelling peanuts, or pitting cherries, or wev, but there was something about pistachio shells that just bugged me. Anyway, last weekend Crockett and I bought two pounds of shelled pistachios at Costco, and there’s no turning back. They’re buttery and delicious and salty and I want to smack past Emma for being so stubborn. Pistachios – two thumbs up.

For lunch I stirred more things together.

No pistachios here – I thought they’d get lost and I wouldn’t do that to them. This is tuna, chickpeas (cooked from scratch successfully for the FIRST TIME EVER – if I succeed again I’ll tell you how), dried cherries, and celery with greek yogurt and mayo and salt and pepper on toast. Not pictured – the sweetest, smoothest, most enormous mango I’ve ever eaten. (6 points total).

So. I’m going to find my camera, and see you soon!

Of course, in the meantime, I’m going to rearrange my living room. Or bedroom. Or both. It’s what I do when Crockett leaves. What do you do when you’re alone at home? (If you live alone, what’s your at-home guilty pleasure?)

Yesterday morning, my heart wanted a Dutch baby.

Not an actual Dutch baby. I don’t know where I’d get an actual Dutch baby. Hell, I don’t know where I’d get a baby on a Saturday morning. We have friends with new babies, I guess… but they’re not Dutch.

Dutch Baby (German Pancake)
Based on that badass Alton Brown’s recipe

2 tablespoon unsalted butter
1/2 cup all purpose flour
1/2 teaspoon kosher salt
2 tablespoons granulated sugar
1/2 cup milk
2 eggs

Heat the oven to 375 F.

Find a pan of some kind. I used an 8 inch cake pan – a cast iron pan is more traditional, but it has to be 8 or 10 inches and ours is 12. The bigger one means less puff, and the whole point of a Dutch baby is the puff.

Put the butter in the pan and put the pan in the oven to let the better melt. Don’t forget. Seriously. Brown butter is delicious but is not the point. Do I need to mention again that the puff is the point?

Stir together the dry ingredients, and mix with the wet ingredients in a blender, food processor, or mixing bowl if you have a stick blender. (Stick blenders are awesome). Blend until totally uniform.

Pull the pan out of the oven, and pour about half the butter into the batter. Combine super quick, and pour the batter into the pan, then stick the pan back in the oven.

Bake for 22 – 25 minutes. It will still be soft in the middle, but it will be puffy all across.

Sadly, it will sink.

Still, it will taste puffy.

You can eat with more sugar sprinkled on top, or with syrup, or with lemon wedges as Alton suggests. I, personally, like them plain. Crockett ate his plain because I forgot to tell him he had other options.

Serves 2. Or just me.

After breakfast I went to the gym, and then did something very important.

Took my best friend to the vet.

She has a terrible ear infection.

Don’t worry – we have pills and ointments now, and she’s already on the mend.

Then, I came home and started studying for my Mathematical Stats midterm which is tomorrow at 9 which I should be studying for right now. If anyone has any insights regarding characteristic functions, now would be the time to share :).

We were across the hall from each other while we had this chat.

That’s just how we roll in our house.

Whole grain bread brushed with olive oil on the outside, then a thin layer of mustard, then cheese, then slices of pear, then proscuitto. After I grilled them, I pulled them apart and shoved in some arugula.

The bread was a little much, honestly. Very seedy and kind of overpowering – I bought it at Costco awhile ago and stuck in the freezer. I’s good but this sandwich needed something subtler.

Anyway.

I studied for hours and got basically nowhere, which was super fun for me, and then Crockett and I met up with his mom and brother and went out to dinner.

I realize this is not good looking. I swear the chicken wasn’t actually pink in my warm squash and beet salad with chicken, bacon, and maple dressing at The Empire.

It was SO GOOD.

Since Crockett’s mom is only in town for the weekend, we played it big and went out for another drink afterwards.

I love pumpkin beer, and the Dogfish Head is sort of a cult version. it’s super hard to get, so when I saw they had it dove right in. It was exactly as delicious as I remembered, and I would kill to have some in my fridge right now. Someone remind me next year, ok?

Yes, I do consider Adam Sandler’s Chanukah song to be holiday music, despite my lack of Jewishness. (This one time, when I had this boyfriend for like EVER, I did almost convert. Which obviously doesn’t count. Plus, we would have broken up anyway and then I would have been like Charlotte. If you don’t know what Charlotte I’m talking about, don’t fret – s’not even a little important.)

I had a big day planned. Big as in: do some homework, do some running, do some voting, rinse, and repeat (except for the last two. Which, if you think about it, is the lamest repeat ever.)

Maida thought that belly rubs sounded like more fun than studying.

While the dignified Cloey watched in disgust. I can just hear her thinking something about ‘prostituting yourself like a common cat’.

I was not swayed by the belly rubs though.

Lunch = falafel that I forgot I had, with hummus and lotsa greens and an apple. It was a sunny gorgeous day, so I temporarily postponed my voting plan to go run.

Sadly, I felt like crap. I seriously blame the blood they drew Monday – I still had vampire victim syndrome. I was supposed to run for 80 minutes, and I made it 30 before I just literally couldn’t go anymore.

Even the sidewalk was disappointed in me. “RUN, Emma, RUN.”

Still, gorgeous. Soon enough I’ll be sloshing through slush.

My voting location is right up the road from my house, so I just walked up there (a meager attempt to avoid passing out, which is what I would have done if I’d gone home from the run.) I stood in line with these lovely folks, and then they made me turn my phone off.

What is that about? What am I going to do, use it to give someone else the right answers?

Success.

And no phone related shenanigans. Mostly because I couldn’t think of any to get up to.

When I got home I tackled my kitchen, because … well, because it looked like this. I also started a pumpkin soup in the crockpot.

Mmmm, overexposed onions.

I didn’t take after pictures of the kitchen or the soup because… I don’t know why. Because I forgot, I guess. Sad.

I did, however, take a picture of the smoothie I made at like 8:30 when I realized my homework had sucked me in and I hadn’t eaten and then all of a sudden had to eat THAT VERY SECOND. You know what I’m talking about.

Then? Bedtime.

Oh, remember this dog? The dignified one?

She found herself a nice comfy spot to wait, and then as soon as I got in bed….

Blammo. All that dignity went right out the window. Silly girl.
